To create Victoria’s first dedicated craft rum distillery – Jimmy Rum Distillery. Fueled by passion and a dash of rambunctiousness, we are thrilled to introduce our first Victorian-produced rum releases. Made from Australian-owned and Australian-made molasses, distilled in our stunning Italian copper still, Matilda, and aged in 200-litre ex-bourbon barrels, our rum is crafted with care. Released in both single cask and small batch blends, each batch of our RumRum is cut to the perfect ABV to be the best sipping rum possible. These rums are designed to rival the finest whiskies and brandies, showcasing what rum can truly be. Whether enjoyed neat, over ice, or with a drop or two of water, our rums are made to be savoured.
